Here are a few of our favorite halibut and salmon recipes......

Marinated Salmon
Melt ½ cup butter (1 cube) with ½ cup soy sauce, you can add garlic if you like, it’s good either way.
Best is to BBQ salmon fillet and brush with sauce the whole time it’s cooking, you can also broil. Cook each side 10min per inch, and enjoy!!!!!

Halibut Tacos

Cube halibut, fry in a small amount of oil until done (it’ll be flakey) stir in taco seasoning with a small amount of water. Make a taco just like you would with hamburger, in a corn or flour tortilla with lettuce, tomato, salsa and grated cheese. Very good especially when you have an Alaskan Summer Ale with it!

 

Baked Halibut

I've been meaning to put this on here for a while now, sorry that it has taken me so long!  

Coat pan with spay oil, lay out your halibut fillets so they cover the bottom of the pan. Sprinkle with a small amount of garlic powder.

Slice brie cheese and lay on top of the halibut, then top with some chopped filberts/hazelnuts (roasted first is always better, but if you don't have time don't worry about it). Then top with some chopped fresh cilantro. 

Cover this with frozen/thawed puff pastry dough (best) or with a pie crust. Bake at 350 until crust is golden brown.

 When almost finished baking, make a white sauce with sliced fresh mushrooms and chopped fresh cilantro added.

Slice and serve with sauce.

 

Island Grilled Halibut-
Recipe sent from a halibut fishing family! Thanks guys! 
 
Marinade:  2 cloves garlic
                1/4 tsp ground white pepper
                2 tbsp sugar
                1/3 cup soy sauce
                6 tbsp corn oil
                3 chopped green onions
                1 tbsp sesame seeds
6 halibut steaks or fillets
 
Combine marinade ingredients and pour over halibut.  Cover and marinate in refrigerator overnight. 
Place fish on the grill and cook 5-7 minutes per side or until fish flakes easily.
We like this with rice or cous cous.

Icy Lady Halibut Batter
Our friend Chris Erickson gave us this recipe, he lives on his boat the "Icy Lady"

 

1 Cup Bisquick

1 Cup Corn Startch

1 Cup water or beer

1 egg

1 tsp. Johnny Salt

Mix together, dip your chunks of halibut in and deep fry. Very good!

Jacques Halibut (or crab) Appetizers

About 2 lbs of cooked halibut or crab
1 large sweet onion chopped
Equal parts mayonnaise and sour cream (depending on how moist you want this, you would make this a little drying if stuffing into bread)
1 ½ cups grated sharp cheddar cheese
Salt and pepper to taste

Mix together and place in partially hollowed out French bread, bake at 350* until hot throughout 15 to 30 minutes.

Another great option is to make this with a little more sour cream and mayo, put into a zip lock bag, cut off a bottom corner and fill pre baked phyllo or other tart shells.

 

Poor Mans Lobster


1 gal water
2 cups sugar
1 cup salt
Bring to boil, drop in bite size raw halibut. When they float to the top they’re done. Dip into melted butter and enjoy!


Jacque is a great friend of mine who lives in Juneau and comes over to Hoonah for fishing and fun. She is like the Martha Stewart of Juneau ( that’s a compliment, I love Martha and I love Jacque). When she sets out a table for company she sets out a table and no one leaves her house hungry! Plus she’s a great fisherwoman, she will reel up her own halibut herself, thank you very much.
